                 Easy DIY Pumpkin Pie

Hi everyone, it's Mia here! Since Autumn is officially here, I am going to be posting more Fall themed blog posts, so stay around! Also, this recipe  is one that my family has used for years in the fall time. We love going pumpkin picking, so we usually use the pumpkins we get to make the filling for this, but if fresh pumpkins aren't available for you, they sell them pre-made at grocery stores. As you probably realize, I don't post very much on this blog, it's usually Jen, but I hope to start posting more towards October. Anyways, hope you enjoy!  
Ingredients:
-1 1/3 cups all purpose flour 
-1/2 tsp. salt
-1/2 cup shortening
-3 1/2 tbsp cold water
-2 cups mashed, cooked pumpkin
-1 can evaporated milk
-2 eggs, beaten
-3/4 cup packed brown sugar
-1/2 teaspoon ground cinnamon 
-1/2 teaspoon ground ginger
-1/2 teaspoon ground nutmeg

1 Preheat oven to 400 degrees F. Mix together flour, salt, water, and shortening to make the crust. Knead dough with your hands and add more water if necessary to hold the dough together.

2 Flour your space and hands lightly. Roll out dough to about 1/8 inch thickness. With sharp knife, cut dough 1 1/2 inch wider than the upside down 8-9 inch pie pan. Transfer dough into right-side up pie pan. In a large bowl, beat together pumpkin, evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg, and salt on medium speed.

3 Pour into prepared crust. Bake for 40 minutes. Best served warm with Cool Whip or Whipped Cream.
